Acesulfame Potassium
Introduction
The chemical name of Ansemi is potassium acetyl sulphonamide, commonly known as AK sugar, which is an artificially synthesised fourth-generation sweetener with about 130 times the sweetness of sucrose. It has the characteristics of good taste, no calories, and does not metabolise or accumulate in the body, and has stable physical and chemical properties. Ansemi is stable to light and heat, and the pH value is widely applicable. It is one of the most stable sweeteners in the world at present. It is widely used in various foods, mainly giving food sweetness, but it does not cause severe blood sugar reactions.
Chemical properties
Colourless to white Crystalline powder; odourless, with strong sweetness, about 150 times sweeter than sucrose, and the taste properties are similar to those of saccharin. There is a bitter taste when the concentration is high. It has good mixing and stability with sugar alcohol, sucrose, etc. The melting point is about 225℃, the maximum Chemicalbook absorption spectrum is 227nm, and the density is 1.83g/cm3 (loose density 1.1~1.3kg/dm3). It does not absorb moisture and is stable at room temperature. It is easily soluble in water (30g/100ml, 20℃) and slightly soluble in ethanol and other organic solvents.
